You don't have to parry. Similarly to Manus if you are pure melee you just have to keep your distance from the boss and bait his moves. It's not worth staying on top of Gwyn because he has a few fast attacks that can easily fuck you if you're only dodging. So, keeping your distance, baiting his grabs and jump attack is the easiest way to win this fight, slow and methodical wins against bosses that literally don't let you use flasks. You can also get more poise and just gulp like 4 flasks and heal through his dmg if you have enough HP, at some point he opts for a slower attack which lets you dodge after healing.

Right, here's the thing though. You have other means of healing yourself other than Estus. Life gems are your best friend. I have done soul grinds in Iron Keep more times than I can count. The best approach is a club. The person in this video is hilariously under leveled and using the worst possible sword and armor in this area. Then cries the game is too hard? Dark Souls 3 is a shitfest where you can't upgrade armor. Enemies are faster and hit harder. It blows my mind that people rush through Dark Souls 2 and don't blame themselves. The Smelter Demon would wipe it's ass with this guy. Wearing rags, a crappy shield, a dinky sword and being in the Covenant of Champions where you can't summon. Lucatiel of Mirrah can help with that fight and she's just outside the boss fog. 15+20 in ADP is all you need and you can have virtually DBZ level dodge skills. I sucked at Dark Souls too but got really damn good playing 2 then polished my skills and got really good at the first game. I know a skill issue when I see it.

Yeah, most souls bosses have that ai reading and counter healing inputs. It's hard to find an opening with Gwyn.

Yup he is designed to punish heals, you have to wait for an opening not just back up. It's a surprise because no enemies did this the whole game but it became standard in the series later.

I got frustrated with the death run on my first play through, and just gave up on fighting him and parried my way to victory. I was so tilted by that, because I saw his move set, and he seemed so much fun to fight head on but the death run just pissed me off. Few months later, I wrote a script that would hold/letgo "w" key on a key stroke, and played through the whole game again(I also missed dlc bosses on my first run since I didn't know that last bonfire= ng) And I was not disappointed, fighting him properly is so satisfactory, all it took was take the "press W to reach boss" away. But, the best boss fight in that game is hands down Artorias. Few years later I played sekiro, and holy heck did it remind me of artorias. On the other hand, in DS2, I'll use every single cheese strat possible, just so I can kill all bosses(5 left) in the single run, and uninstall the game.
