Would you consider pressing F5 sometimes, or does it feel like cheating? It shows "debug" information, such as your exact position (e.g. exactly how deep you are in the world) or stage of growth for plants.

For going up in the water stream, I think if you make holes into the wall behind the stream that are high enough to stand in (at least 2 blocks) then air pockets will form into them where you can step in and replenish your air as needed.

I think tree saplings need actual sunlight to grow. Also, don't give up on minecarts! Mese is found at level -512, so only 4 times deeper than iron. I know it's still far away, but you dig so much faster with iron now.

If you place the glass door right under the glass block then you shouldn't have to bend the water. I think you're wasting time digging into walls between hallways and into floors, trying to find more ores. Just collect what's on the surface: if there's more behind or below, then you'll see it either from the other side while digging the next hallway or while digging the next floor. The exception would be the outside walls of each floor.

FPS problems: you've turned on "unlimited viewing range" when you went exploring, that's probably the reason. Please don't go back to the old version.

Since you've mentioned it: you can get cotton seeds from *jungle* grass, now that you're in 5.7.0. Also, you can find wild cotton in savanna biome and it will give you cotton seeds as well.

The higher FPS is very noticeable. I'd say, stick with the 5.7.0. I wouldn't worry about compatibility, it should be fine. If there's anything new in terrain generation, it will appear in those chunks that you've not visited yet. Old chunks will stay as they were. As for the visuals, it looks really dark now. I kind of liked the gamma correction you did before, except maybe it was a bit excessive (you could hardly tell copper from iron).
