I just bought myself a Dutch oven for Christmas and can’t wait to use it…I’m definitely trying this recipe first because it looks beautiful and pretty easy. I’m wondering, if I wanted to add flavour ingredients like herbs, seeds, walnuts, raisins etc, what stage would I add them? In the initial mixing or folded in after it’s risen once, or just before dropping into the Dutch oven? Thanks in advance! At $5/loaf for store bought, I’m going to learn to make bread, save money and hopefully gift neighbors with some. We all need a little love and help these days. Thanks for your recipe!

Your gift to yourself will definitely pay dividends, esp. with the insane cost of bread. You may want to just use all-purpose white flour on your 1st go; some people dislike too much whole wheat - I have found 4.5 Cups of White; 2.5 Cups of whole wheat is a good ratio for people that dislike the taste of whole wheat (like my kids). The stage to mix in the herbs would be when you are preheating the oven; just mix/fold the herbs into the dough. Do not forget to preheat the dutch oven. Do not use Dutch oven for baking bread ! The lid keeps all the moisture in the bread the bread is heavy and unbaked inside ! Bake a real bread instead, you may sprinkle the bread with a few sprays of cold water and do it a few times. That will give it the crunch result you ever wanted ! I learned by mistake and ever since not using the Dutch oven for baking bread !

Thank you for your comment, I have a question though…did you at least try following the steps mentioned in the video with a Dutch oven? Sounds like your past bread frustrations have lead you to dismiss this process….I can relate. However, we’ll simply have to agree to disagree. A good quality Dutch oven with a heavy enough lid that is preheated adequately will create the ideal conditions to bake an easy Artisan bread. The Dutch oven retains its heat (temperature) during theBaking process. Baking in this environment for 30 minutes and then removing the lid baking for another 20 minutes guarantees a delicious crust and a fully cooked loaf of bread. This recipe does not over complicate making a delicious loaf of bread.

Substituting the sesame oil for (1) Avocado oil (2) Olive oil. But you'll lose the nutty flavour. If taking the oil out completely perhaps use a sesame seed vinegar - never try this, but in my next batch (I make this often, as a to go to snack) I will.

I use an enamelled cast iron casserole dish. The Cast Iron has a heavy lid, hence, plenty of steam gets trapped & retains a high heat without the heat fluctuating greatly - this is what gives the bread the artisan look and taste. This is also why the Dutch oven/cast iron is ideal. Will not turn out as well, but could also work (subpar) …. place dough inside an oven safe (at 500 degrees) pot, casserole dish with a securely fitting lid, the tighter the seal the better. In lieu of that, place a stainless-steel bowl or a deep roasting pan, or another oven safe bowl covering the loaf while baking. Please note, in all cases the material has to be oven safe at 500 degrees.

It’s a forgotten recipe from the Great Depression Era…and one of my dad comfort foods from childhood (one of mine too). It is packed with nutrition (less than $2/meal). If you like peas, than you’ll enjoy this😋 I should also mention, you can use can or frozen peas and skip the cooking of the peas. Enjoy!

When you bake what temperature are you baking at? Is it 500 or do you lower it? TY can't wait to try it.

Preheat at 500 with Dutch Oven in the oven. Be careful with the lid. Keep the temp at 500 for the whole process (30 mins with lid on; 20 with lid off)

FYI You don’t need to mix different flour….could simply use 100% all purpose white flour….I am sure you will be pleased with your results.

You can use any, but “bread flour” works best I think. More chew.

Any. Regular all purpose. In the video I used whole wheat/white. You do not need the mix. My kids prefer 100% white flour. However, my favourite is a mix of white (4/7) teff (1.5/7) and whole wheat (1.5/7). I would not make with 100% teff. Teff flour is harder to find, teff is usually sold in bulk stores.
