I recently bought my first Opinel (a carbon steel no. 8) on a whim, and I fell in love with it immediately. It hasn't left my pocket since the day it showed up in the mail. I don't use it for everything, but it is now my dedicated mobile food prep knife. I still carry my Case Stockman for other EDC tasks. I will note though, my Opinel did not arrive with a good edge. It was honestly pretty dull out of the box, but its blade steel is very easy to sharpen, and within less than 5 minutes of work on a stone it was sharp enough to shave. The blade geometry is very thin, which lends itself to being a wickedly effective slicer. Considering the $18 price tag, a carbon steel Opinel may well be the best value folding knife on the market. Anyone who is into folding knives should pick one of these up.

When I bought an ettrick, it came with a horribly wild sharpened bevel. I decided to sharpen it as well and also got a proud tip. Definitely a design flaw. My condolences to your flock of ettricks
@TheKnifeRaven26 күн бұрын
@@the_swinging_axe I'm very sorry to hear that! Based on many of the comments here, it seemed to me that the issue with proud tips was quite likely my own fault. Even so, I still can't help but wonder why the blade on the Olive wood model is so snugly tucked into the frame, whilst the other examples are extremely high in the blade-well-bordering on proud, even when new. If the Olive model was the standard, rather than the exception, I doubt there would be any issues regarding proud tips for the Ettrick pattern. Thank you for sharing your experience. Cheers!

It looks like there’s a flat spot in the secondary bevel up near the tip on the show side? If so it looked like the primary grind wasn’t made correctly, which would be too bad, but in my experience pretty typical of Otter. Easy to see at 6:45 as the secondary bevel catches glare in the light.
@TheKnifeRavenАй бұрын
I inspected the area you are referring to and it seems you might be right. The edge is still perfectly smooth, (not to mention sharp) but the grind isn't completely uniform along the entire bevel. I, personally, wouldn't deem this to be a big problem, as I tend to reshape the secondary bevel when sharpening, anyway. Even so, thank you for pointing this out-I should have mentioned it in the video! Cheers!

@TheKnifeRavenАй бұрын
@@matthewrix2164 Sadly, I have no updates regarding the issue with the springs. I sent A. Wright an Email about this problem a few months ago, but alas, I never received a response. While I won't tell anyone *not* to consider a Wright, I still think that there could be a risk of experiencing issues. I have a few recently made models (early 2024) that seem fine, from what I can tell. Even so, my lack of updated information on this subject makes it rather difficult to provide a verdict and A. Wright's silence on the matter only worsens the problem. I believe they can produce quality knives when they try, but this flaw has become expected for me. I'd find it hard to recommend these knives with confidence until some form of action is taken on Wright's part. I apologise if I couldn't be more helpful, here. I really wish I had more to offer. Both of the knives you described sound beautiful! There truly is a vast array of designs worth considering when it comes to French cutlery and I must say, I've yet to be disappointed! Here in Canada, the only French knives you'll find are Opinel, Douk-Douk and if you're lucky, the odd Laguiole. Anything beyond that has to be purchased from outside the country. I imagine Europe has a much broader market when it comes to traditional cutlery, as those old patterns and designs are still greatly recognised and appreciated. I'm glad you enjoy this type of video. Another sterling offering, sir! I am fond of buffalo horn as one ingredient in a wood-based handle recipe. One traditional knife handle is found on Japanese kitchen knives that use buffalo horn for the bolster, followed by a pale wood handle. Visually the contrast is appealing but the horn being water resistant and tough makes for an excellent bolster, whilst the wood offers superior grip and a light weight. For an all-horn handle I'll jump at Ramshorn. Talismanic for me.

@@dongkhamet1351 I believe I've seen the type of handle you are describing, although I can't place where. 🤔 I find it fascinating how well horn contrasts with woods of varying types.
