I just bought one, but I understand it does not have such program. You could use an external hose to attach to a special canister and create a vacuum in it, then after whatever minutes, manually release the vacuum in the canister where you are marinating. (make sure hose attachment in canister meets "Gastronorm" specs). Research the term "Gastronorm". Henkelman has the hose as an accessory for all tabletop models.
