Thank you for this video! I am currently living in SW Germany and have become addicted to dampfnudels, driving up to an hour to reach Oma's in Landau. I want to make them at home but online recipes don't show technique! Thank you ! Now do you have a good potato soup recipe? :D

I havent even finished making this and my grandma's looked at me like I've disrespected my ancestors more times than I can count. I've been asking her to teach me for years and now I finally know! PS: She also was VERY adamant to NEVER use butter. (Though I prefer to use some to cook them on a pan)

They still kill gays. Why don't you try to liberate the gays around the world now instead of dredging up things that have happened and you can't do anything about it. Live today. Try to save the living.

How much yeast please
@SabineThinkerbellum Жыл бұрын
42 g yeast on 1kg flour. You need to do the math on how much you need for the amount of flour you use.

Awesome! Very helpful to have a video demonstration. I tried a recipe for these and ended up with horrible sticking (I think I left them too long and my pan wasn't nonstick or anything so I probably brought that on myself) There's a similar food called 'Dampgnepp' (spelt variously) among the Pa Dutch though I'm unsure how common they are per se as I wasn't raised in the culture myself (my grandmother was Pa Dutch but didn't pass it on). Most the Pa Dutch came from the Pfalz originally in the 18th century, so it might have been similar to this though I'm unsure as I don't have a recipe.
@ginafromcologne9281 Жыл бұрын
Aww, yes it's very counter-intuitiv how much water they need in the pan. I live in the Pfalz too and we sometimes call them Dampfgnepp, so I think it's the same thing. :) I hope they work out great in your next try. :)

@@ginafromcologne9281 coming back to this video, I did eventually find some recipes Also a fun idiom of if you see fog in the morning, it's come from the rabbits/foxes/wolves having been making their Dampgnepp, baking their bread, or brewing their coffee up in the mountains (which'd be di Blobariye, the blue mountains, the part of the Appalachians in Pennsylvania) the Pa Dutch version seems to be more similar to what I've seen from Bavarian versions of Dampfnudeln, in that they're not made with a salt crust, which I've seen no mention of in Pa Dutch cookbooks, but are instead made with milk and sugar, or at least served with milk and sugar, often for breakfast From what I've read, food wise Pa Dutch cooking has a lot in common with stuff in Swabia, and interestingly enough my own family's progenitor came from Augsburg in Bavarian Swabia, so I wonder if perhaps they too have something like that version of Dampfnudeln edit: just found this "That said there are some regional differences. Rheinland-Pfalz/Palatinate traditionally steams their Dampfnudeln in salt water (and they’re also commonly eaten with savory sides), while Bavarian Dampfnudeln are decidedly a dessert: steamed in milk, butter and sugar and drenched in vanilla sauce. The latter is also the way we make them in Swabia and is how I enjoy them best." in a recipe for that sort, so may indeed be the case then

Liebe Grüße aus der Pfalz! :D I also still remember my mother or aunt preparing them and I make them too occasionally. Here in Rhineland-Palatinate we make the very best version of course. I love it how you can use them for a warm meal with potatoe soup one day and like bread rolls with butter and jam the next morning. :)
