Hi, thanks for watching :) ngl i didn't really expect people to try and learn off this video and I know I didn't explain very much. Sorry for long response but I hope this helps: Layers are pretty simple especially in Illustrator. Layers are just for organisation and also putting objects in front of each other. Its kind of up to you how you organise your artwork, depending on what you're working on. But what I do for these sort of landscapes is just create a new layer every time the colour changes (the colour changes every time I create a new part of the landscape which is further away). I like to lock every layer except the one I'm working on, just so that I don't accidentally change something. Also, it really helps to lock specific layers when you're trying to multiselect objects by clicking and dragging. I'd say when you're working in Illustrator keep your layers locked by default.
