I listened to your whole video and was surprised when you said you killed your starter many times. I decided to do an experiment, since I had not used my starter for many months (best guess is 5 or 6 months -- the longest I ever left a starter in the fridge with zero feeding). The starter had a VERY black ring around the top and looked terrible. With one clean spoon I lifted off the top, most of the top layer to where it showed starter untouched by anything weird like the black and with a second clean spoon I took about just a small amount -- maybe a teaspoon -- of the unadulterated-looking starter. I smelled it and it did not seem like a bad smell. I started two jars of starter: one doing it exactly as you laid out, and the other exactly as you laid out but also adding that teaspoon from the old starter, both in very clean and dry jars and left them overnight in the cupboard. In our house the temperature is about 70 degrees F at the lowest and not much higher since it is a cold spell here. This morning -- about 20 hours later -- I took a look at the jars. The one with the teaspoon of old starter was already making bubbles and the starter had clearly risen above the rubber band, whereas the jar that I had not put any starter in had no bubbles and did not rise at all (not a surprise so early in the game). Anyhow, I am so happy with the starter that is already bubbling and rising I'm going to continue with that one. The fermenting wheat and water I put in the other jar I will use in some recipe today. I was thinking about making some gravy with some fresh chicken stock I have, so I think I will use it in making that gravy. I now have hopes that I will have starter I can use to make some bread in a couple of days! One thing I would warn all newbies at making and using starter is to discard any starter or sourdough batter that ends up in a bowl or on a utensil by wiping off with a paper towel and throw it in the trash -- or mix it in a bowl in the sink and pour the bowl out in the yard. I did not know in the beginning that the sourdough is especially hard on pipes and CAN get them clogged if/when enough goes down the drain. I try to keep all flour batters even that are not sourdough out of the drains. It's just a good habit!

That's so awesome! Fresh bread is just around the corner for you!! YUM . And yes starter down the drain is definitely bad. We learned that the hard way!

Enjoying your videos! I have to say that the bench knife (also known as the bench scraper; I just save the scraper word for my plastic one, haha). Anyhow I have found the bench scraper to be something I used ALL THE TIME when I am chopping onions and other vegetables, because it makes it SO easy to use my left hand to hold the veggies on the left side and I come in with the scraper to collect the diced potatoes or whatever and swoop a bunch easily and quickly into a bowl or into my pot on the stove. The only time I end up using it with bread dough is when I want to create more tension by scooting the dough from the outside from left or right and so on. Try it, you'll like it! The other thing -- and this is my FAVORITE tool for breads and for just about anything I make with flour, (which is a lot of things!) -- is the Danish dough hook. A lot of times you want to get the flour and liquid mixed well enough that you know you got all the flour in there but you don't want to "over-mix" it either. This is also true with things like pancake batter and cornbread for instance. But even with things I have no worries about over-mixing, I still PREFER to use the Danish dough hook, because it makes mixing the flour with the other ingredients SUPER simple and easy. I don't know how to explain. I put in a BIG vote for the Danish dough hook! The large one. (Only people who make pancakes for just one person and that sort of thing need the small one -- in which case it is awesome because it will fit in a 2-cup measuring cup!) I just started making sourdough about 5 years ago, and it's been a long and interesting journey. At first I was NOT milling my own flour; then I was milling it in my Blendtec blender (which is not quite as good as using a grain mill but it totally worked and all my bread was made using that for the first year or two that I began milling my own flour!) Vitamix will work too though not quite as well. (My housemate has one is how I know.) But I am so sold on milling my own flour now that if I had to I would use a mortar and pestle, LOL. (I do have a Wondermill now and LOVE it.) I had a HARD TIME with the sourdough. Came from a background of NO baking of anything with flour at all, and yet it was also fun. Every loaf seemed to come out different, but 99% of the time edible and delicious. Then again, there was lots of angst. I turned to using yeast a LOT for a year or so and that helped me get over fear of baking bread. Now I am watching different videos on sourdough before I jump back onto that saddle! Just started making new starter! Anyhow, I just wanted to thank you for your videos which I find to be very fun and motivational. God bless!

Yes! Just take your leftover citrus peels, stick them in a jar and cover with vinegar!! Let sit for 4-6weeks. Strain. You can then dilute or leave as a concentrate. I'll be doing a video on it soon!

@TheHomesteadingHousewife3 ай бұрын
That is strange. It may be a lack of nutrients. They may be getting enough to grow, but not fully produce. Or, maybe not enough water. Those would be my guesses. Your climate is very different from my Midwest climate, so I can't be positive what the issue could be.
