@@slug_5112 you can try sherry or other cooking wines like cooking sake or rice wines. Drier white wine could work in a pinch too. Just not mirin, it’s too sweet

You didn't ask for recommendations but if you want to dip your toe into 90s anime again, I recommend Great Teacher Onizuki for laughs, Outlaw Star for space adventure, and Monster (technically early 00s) for crime thriller Another great vid btw

@@vlogmakinesi it’s pretty easy to overcook meat and sometimes the meat is just tough. The baking soda helps a lot, just don’t put too much and it’s best if you don’t marinate it for too long because the meat will be soften too much such that it gets mushy. Thanks again for the support!! ^^

I have to be honest, I just graduated college and being so stressed in school really made me hate cooking for myself more and more each year as I had less and less free time for myself. It felt like so much effort during a time I was so stressed and tired, and I was struggling to find recipes tasty enough to make it worth it. I wasn’t taking care of my body and basically had the same low-effort meal everyday, and the thought of eating made me feel sick sometimes. Dungeon Meshi made we want to try approaching cooking again, and your recipe was maybe the most delicious thing I’ve made for myself- and super easy for a depressed person like me lol. I shared it with my roommates as well, and I got just as much enjoyment seeing how much they liked it as I did eating it myself. (Btw, the differences for what I used was instead of kelp kombu, I used the Yamaki Kappo Shirodashi I had on hand, and white miso paste instead of the normal kind. I balanced the salt with a splash of mirin and a sprinkle of sugar, and I was really blown away. Not sure what the differences would’ve been if I had followed everything to a T, but wanted to mention it haha) Long comment but I just wanted to say thank you and I’m really looking forward to future videos! I hope it’s not weird to say all this but I just really wanted to express the impact this had on me.

Oh my gosh, I really feel for you and I'm so glad you were able to approach cooking with excitement again. Your substitutions sound great! As I say with cooking, make recipes work for you, not the other way around. I'm really happy that you got to eat and share a delicious meal with others after all this time of eating the same meal on repeat. Maybe you might benefit from cooking in bulk? I love food but I don't have the energy to be cooking every single meal from scratch so I prefer cooking 2 dishes at a time and in large quantities so that I can alternate between them for 3-4 days. Easy recipes are anything stir-fried, stew/soup, one pot or baked in the oven. If you make a lot, you can freeze some for heating up quickly when you're tired. You sound very very burnt out, please take care of yourself and eat some yummy food. You deserve it. You're doing so good and I'm so proud of you for staying strong and getting up each and every day. You've been through some bad times and things are only going to look up from here! Start with easy recipes that don't take a lot of time and effort and slowly build a menu of different dishes for yourself that you can recreate easily. You got this!! Let me share 3 struggle meal recipes too that I use when I want to eat but don't have the energy and I think you already have some of these ingredients :) Spicy Tuna Mixed Rice (no cooking) In a bowl, mix a can of salmon/tuna (flavored/unflavored) with cooked rice. Add gochujang (for spice), sesame oil and kewpie mayo (other mayos don't hit the same) to taste and mix it all together. Add half an avocado if you have any. Wrap a tbsp of the mixed rice and some avocado in a small seaweed sheet for the perfect bite. You can mix in rice vinegar or mirin and other ingredients to taste too, very customizable. Broiled Miso Salmon (5 min prep, 5 min bake) Preheat oven to broil. Make a sauce by mixing 1/4 cup miso, 2 tbsp mirin and 1 tsp rice vinegar (adjust ratios to taste). Pat dry ~1lb salmon and cut into single portions (however much you wanna eat in one portion) and lay them on tray with a sheet of aluminum foil with some space between each portion. Broil for 3 mins, take out and brush the sauce on and broil for another 2 mins. Noob Friendly Risotto (20mins) In a pot, add 1 tbsp butter and stir fry 1/2 a diced onion until translucent then add a can of salmon or a small portion of meat and brown them slightly. Add 2 small bowls of rice, 300ml of water, 1/2 a chicken stock cube and some frozen veggies. Stir until water is reduced about half. Lower heat and add 100ml milk and 2 tbsp heavy cream. Salt, pepper and add (lots of) parmesan cheese to taste.
