So typically we long cook a pork shoulder to break down the connective tissue. Even though these are cooked quick and to a low temp, its wild they can still be tender. Looks delicious.

Yeah, it's surprising how tender it is without the long cook. Interestingly, the key is to not overcook it, or it will get tough, before it would eventually get tender again if you cook it all day. :) Thanks for stopping by!

You can blast it with higher heat at the end if you want to get it really crispy. I like to do it at 250° spatcocked, but ~300° or so when it's a whole bird so it doesn't take too long. What do you do?

@Saltpepperskillet typically I smoke legs and thighs at 225 for 30 min and then kick it up to 375 until its cooked through about 180. I don't really like turkey breast so I have never smoked a whole turkey. I just know the skin will come out inedible if you smoke it low the whole time
