@@Shmoko_Loco I use a kitchen scale, which you can find at grocery stores these days. Start by mixing 300 gm of pizza flour, 5 gm honey, 5 gm yeast and 300 gm warm water. Cover and refrigerate overnight. Then add 750 gm warm water. Mix. Add 625 gm of pizza flour and 40 gm salt. Mix. Add 625 gm more flour and mix. Work the dough until it forms a ball then rest for 15 minutes. Knead 5-10 minutes then rest for 30 minutes. Divide and roll into balls. I usually get 8-10 depending on size. They taste best when you let them sit in the fridge for at least another day before rolling out. This recipe has worked better than others I’ve tried. Hope you enjoy it!!
