Seems like a long run to only have one post holding those pallets upright. If the pallets are joined securely together in a straight line, it will eventually sag - plus with the pressure of the goats leaning up against them, I don't think it'll be strong enough. I think you'll need a few support posts along the line of pallets that secure them into the ground, OR have a few pallets perpendicular to the pallet wall, acting as a brace. You could build the pallet wall and see how secure it is, then add additional bracing as needed.

Also all you need to sauté some vegetables is some salt or something acidic to break down the veggies. They come out better and retain their flavor better. Use a little oil and maybe a tiny bit of balsamic or something. Even the smallest amount of salt mixed in will help onions break down faster.
