I think this recipe has too much liquid (about 68-70%) that very difficult to knead by hands, or maybe the flour you used can absorb a lot of water.

I'm not sure about the bitterness but as for the colour your matcha might not have been a high quality one. Matcha that is more brown or dull tends to be lower quality

Hiii Thank you for your comment!! The bread will get a little hard in the fridge so pls fill the cream before you eat;))) The cream should be stored in the fridge but the bread is ok to store at the room temperature;)) Ps. I personally like this matcha bread cold 💕
