Grip/hand//clinch fighting. For example, some are drilling for grip breaking. Some are drilling getting under-hook or collar tie on an opponent gripping you etc etc. If you train Judo, Sambo, Jiujitsu(stand-up) you will recognise many of the positions. Once you know that is what you are looking for, ie he's not just doing some funky kungfu dancing.
