The arm is not suppose to rock back and forth. It should be tightened with enough room to allow dough to gently be pushed through.

To be completely honest, the way he’s doing it is correct. For lower hydration doughs like bagel dough, you need that pressure from the spring loaded arm for better gluten development. In Ankarsrum’s video you linked, it’s a basic bread dough and they did not start with a yeast sponge then add the rest of the dry mix. I made a batch today with mine and made the mistake of not keeping the arm closer to the side of the bowl for my dough.

La masa inicial es medio kilo de harina de pan, medio kilo de agua. Al 1:15 le añado otro medio kilo de harina.

Have you tried doing this bagel recipe in the kitchenaid? I have a pro 600 but looking to invest in the Ankarsrum mixer for bread making only, but wondered if the KA can handle the bagel dough at all?

I have a Kitchenaid, model is KSM90. It's not a high-end one. Yes, I've tried this bagel dough with it; once. Or, part of once. It was not even close to strong enough to handle the dough; I had to finish by hand.

I was looking forward to hearing the sound of the motor because it can tell a lot about power and mechanical quality, and because there is precious little known about this machine in North America, especially vintage models. The thing is, I'm looking into getting what I believe to be an N4 from 60s and anything I can learn about this machine will help me decide whether I should take the plunge or not, because the seller is NOT giving it away and for a good reason, it comes with a grinder, a shredder a juicer and sausage stuffer. How long have you had yours and how often do you use it? Would be be suitable for making 4 loaves of bread (2kg of whole wheat dough) at a time every couple of days? Can it do other things besides dough? What do you think of the attachments? What should I be looking for in a model as old as the N4, are parts still available? Thanks again, your opinion is precious to me :-)

Hi! Mine is from circa 2011; it may be very different from a 1960s one. To try to answer your questions: I think this is a workhorse. I haven't baked much in the last few months, but when I make bagels it has always run smoothly. Bagel dough is by far the toughest, densest dough I've ever worked with, and is in fact the sole reason I bought this machine. I don't actually use it for anything else, I'm happy with my Kitchenaid for other breads and cake batters and meringue. So I'm really not able to answer about the Assistent's usefulness for anything other than heavy bread doughs. I'm sorry not to be more helpful. Good luck with your decision!

Not that I really need it, my Kitchenaid Professional 6000 HD can knead more batter that I can possibly bake at a time, but I really like the funky design and the accessories it comes with, plus the fact it's from the 1960s, pretty much at the peak in of kitchen appliance design and durability :-)

So I did make the plunge and have had my 1957 Electrolux Assistent model N4 for several months now and have pretty much put the KitchenaAid 6000 HD aside for making bread, it just can't hold a candle to the Assistent :-) Done a 7 pound 60% AR whole wheat dough batch lately ,no problem, hardly slowed down at all, it really is that good. You just need to learn how to set the roller at the proper distance depending on the amount of dough and use proper mixing order (water first, flour later) and you're good to go :-)

Way too much flour. There was not enough mixing time to develop gluten before dough was formed into a ball. This means not enough hydration so the bread would have been dry even during proving and hard and tasteless after baking... instructions should always be followed for machine.

Peter Reinhart's recipe calls for adding additional yeast, flour and diastatic malt to the preferment. I didn't see that in the video. When exactly were those ingredients added. When I added them, after first mixing and rising the preferment in the Ankarsrum bowl, I got big lumps in the final dough that NEVER smoothed out.

I admit that I skipped ahead several times. Watching dough being kneaded in real time is like watching a time lapse of grass growing! :D (I love to bake bread and garden, so this analogy has double meaning for me!) That being said, I am really impressed! I have got to get me one of these contraptions. It's a shame that they are $800! :(

Hopefully by now you got yourself one for a better price? Found my Electrolux Assistent N4 from 1957 for $80 complete on kijiji... Just like the video, it does take more time than other types of mixers but works very well indeed :-)

Cost has absolutely nothing to do with quality but what it has to do with what people are willing to pay. And if this trash was priced what it is really valued at, then I would pay the 50 bucks. Otherwise, it is overpriced trash.

I'm guessing you haven't used the Assistent, otherwise you'd know that the roller is squeezing the dough similarly to what your fingers would do. The scraper turns the dough a bit each revolution. As the dough develops, it is held by the scraper, and the dough is _not_ being dragged along the bottom, it is being twisted and pulled much like a taffy machine does. There is minimal friction heating with this mixer. The Assistent's kneading action is more like a spiral mixer's than home machines'.

I have been a devoted Kenwood user for years - I still have two mixers that my mother bought 50 and 30 years ago and they work perfectly! The problem is that I am an avid bread maker and the newer Kenwood's just don't have the strength - a new 3 year old machine just died after its 2nd repair. I think I'm going to try this machine! I know someone, a master baker, who relocated here from Switzerland with her beloved Kenwood; I think she recently replaced it. She mostly does cakes, so I don't think hers will have to work so hard but the one she brought here had served her well for many years. This machine ROCKS. I waited years to be able to afford it (even though it's overkill for me) and since buying mine a few months ago, I've bought two to give as gifts, and another friend just ordered one yesterday. My cousin and my friend (the recipients) LOVE theirs, which helped push my other friend's decision to bite the bullet.

Sorry to hear that about your Kenwood. It's pretty bad to have two repairs for such a young mixer. I was thinking of getting the Titanium 7-quart. Usually, they get very good reviews.
