I'm still in the steam age using FSX-SE, so each of the monitors has the different panel options opened from the little menu box that comes up on cockpit view (the one that has the quick start option and bottom left of my main screen). From there, if you right click on the window it gives you the option to undock. I then just drag and resize as required. Once that's done I save the flight and most of the time it stays as saved.
