Usually for the lotus root we eat braised in a slightlt sweet vinegar sauce (my mom actually puts a little bit of ketchup) or with peppers. When you bite and pull, it's a bit stringy. There's also a steamed dish where you stuff the holes with rice and other things but imo it's a lot of effort for a very average tasting dish

Popped lotus seeds, or you can put them in soups.. you can put just about anything in soup though.

You need to look up how to make jelly, jam and syrup with them. I am from Arizona and it's the funnest to go out and collect these and spend days trying to make jelly but if you're like me some will turn into syrup lol tastes super good.

In Thai cuisine they put those small eggplants in Green Curry. Meanwhile, lotus root is like potato but a little tougher.

Recipe: 3 Large Eggs, yolks n whites separated 3/4 Cup Sugar 2 Cups Whole Milk 2/3 Cup Heavy Cream 5 Oz Dark Chocolate 2 Tbsp Powdered Sugar Chopped Pistachios Whisk together Egg Yolks and sugar until light and creamy. Bring milk and cream to a boil then pour into the yolk mixture slowly while whisking the yolk mixture. Transfer mixture back to the pan and keep stirring on low heat until coats back of spoon 3-4 minutes (do not let simmer). Remove from heat. Add chocolate, stir until smooth. Pour into ramekins, lightly cover with plastic wrap and set aside. Once cooled, refrigerate for 3 hours. Whisk Egg whites with powdered sugar until stiff peaks form. Bring a pan of water to just below a simmer. Add one Tbsp of White to the pan. Once swells, flip it and then remove with a slotted spoon on paper towel. Top the dessert with the White and pistachio A
