Question. What’s the difference if you take the pan off the heat to add the paprika, only to put it right back on the heat seconds later? Won’t the paprika still burn? And if you cook on high heat later after adding the paprika, will that also burn the paprika? Legitimate questions here because I’m trying to learn how to make this. Also what brand of Hungarian paprika do you use?

Don't add paprika on high heat!!! It'll burn and becomes bitter which will ruin the taste. The paprika is delicate so it could burn easy. Taking of off the heat to cool just a little bit is the traditional way but you can add just a little( quarter of a cup) water and than add the paprika to it. the whole point of taking the pan off of the burner is to let it cool while we add the paprika so it won't burn. hope this helps. 😊😊😊

Excellent recipe! Tell me how much to cook the octopus? Why do they write somewhere that it only takes 2-4 minutes to cook it so that it does not become rubbery, but somewhere they say that it takes about an hour?
