I prefer for that added "kick" to use Spanish smoked paprika (I find it better than similar Hungarian) and ground cumin. Nicely presented video

That is an excellent choice thank you for sharing this idea 😍 in Tunisia we use a home made harissa that is made with smoked pepper and you’re right the taste is way better than just regular store bought harissa. I never thought to suggest smoked paprika when harissa is not available. Your comment just made me think at it differently. Really appreciate the advice

This gives me nostalgia to Tunisia. I travelled to Jabil, Douz, Keirouan, El Djem, Hammamet, Nabeul and so many other towns and cities from 2017-2020. The food is just amazing and I brought home liters of olive oil, dishes and olivetree wood products. Visiting Tunisia feels like coming home, even though I am just a simple tourist. Every mama has her own couscous secret recipe and it's impossible to recreate it at home. Thank you for sharing your secrets!

I love Moroccan food, can you share your recipe? I was in Marrakech last year we had so much good food, unfortunately the earthquake messed up some beautiful houses and the mosque in the medina :( it was sad to see.

This is a very special dish for me and my family. I was raised in Australia but my father was raised in Tunisia and he taught my Spanish mother how to cook it using a traditional coucousier. We had it often for special occasions growing up. I’m finally getting one of my own and I simply can’t wait to taste it again! ❤️

I would salt before blanching. Simply because potatoes take in the most flavor/salt when being cooked. And even though it’s not “cooking” it’s still having the beginning stages of that chemical reaction

@@florb3533 thank you for watching. I don’t have a link but these are the ingredients: For 2 loaves you will need 200gr of starter + 600gr of water (I use spring water) mix well then add 900gr of bread flour + 20gr of salt (mix salt and flour together) then mix all the ingredients

I will say go to your grocery store and look at the freezer section, if it’s there then you can freeze it. 🥰 hope this helps and thank you for watching
