Japanese TV shows usually hire comedians as victims for these pranks. Of course the comedians know they are about to get pranked but usually they don't know the kind of prank they're getting beforehand. As comedians, they know how to act dumb and then amplify the silliness of their reaction to the prank once it happens. This results in good entertainment in almost every prank you could imagine. In Western countries where victims aren't comedians nor experienced actors, prank shows can be a hit or miss.

There is not one genuine, not performed by stuntmen. But in occidental countries it is the same: in hidden cameras prank, it is most of the time staged: they don't take risk to heart attack or being sued or violent reaction
