This is the first time ever seeing one of your videos. Nice presentation. You should get your channel going again.

Love the shallots, love the blanching & shocking to keep the green beans green & shiny. However , NO 🧄🧄 garlic 🧄🧄? C'mon now, ANY Chinese chef would ALWAYS start with hot oil & minced garlic , even Indian, Malay, Singaporean, any style of Asian persuasion cooking will never get caught without any garlic❗❗❗ It would be even better if you add some crushed black beans paste, and a splash of cooling wine👅👅👅👍👍👍

Hey Gifty, Thanks for sharing this recipe. I find shallots too sharp, so may I use red onions instead?
@GiftyGyimah2 жыл бұрын
Yes, definitely. You can also use red onions if you like, since they're milder.

I fry my green beans (lots of them) with chopped bacon, onion and green pepper. At the end add a few dashes of Maggi sauce. Can be served as the main dish. Also can add your choice of greens for added nutrition.

I've been having trouble with jasmine rice on the stovetop. Making a chicken curry and need enough rice for 4 people. What ratio would work and do you let it sit after the 30 mintues? Or serve right a way?
@GiftyGyimah3 жыл бұрын
The recipe, which is 2 cups of rice, is definitely enough for 4 people. You can serve it right away - no need for it to sit :)

What if u dont boil it first but straight away saute them? Will it still be the same?
@GiftyGyimah6 жыл бұрын
Good question Theresa. If you sauté the beans when they’re raw, they’ll take longer to cook and start to turn that grey-green colour we all hate. Blanching (par-boiling) for a few minutes in boiling water, then cooling them in cold water helps retain their bright green colour when you sauté them. This goes for most green veggies...broccoli, asparagus etc.

Thank you for the useful tips! I wonder though, I'm always reluctant to prepare and freeze food for later use because I believe fresh food is best. What do you think?
