I wanted to show you a pic of the pie, but I can't figure out how to upload it here. I need to tell you that the dough was difficult to work with. I've made many, many pies in my life--first working with regular flour, and then later with one-to-one gluten-free flour when I found out I had Celiac. If I didn't have experience, I may not have been able to fix all the dough problems I encountered with the Keto dough. I left the dough 1.5 days in the fridge. It was quite hard when I took it out. I left it out of the fridge for about 1.5 hours--I kept checking it and it wasn't pliable before then. I rolled it out as you instructed, and it was actually slipping between the parchment paper. I flattened it some more with my hand and sprayed Pam on the paper, which seemed to work. But it made the already "wet" dough more wet. I tried to dry it off a bit, and rolled it out to 9.5 inches, because I don't own a pie plate that's smaller. (I didn't cut the dough in half because of that, I cut it into 2/3 - 1/3). After I rolled it out to 9.5 inches, I was able to peel off the bottom layer of the paper, but when I flipped it over the pie plate, it did not want to separate from the parchment. I had to carefully use a thin spatula and work it off. It ripped in spots. I used pieces of the remaining 1/3of the dough to patch it--which didn't look fabulous, but I figured I'd hide it with some pieces shaped from cookie cutters. The dough stuck to the cutters. I had to keep pulling it out of the cutter, rerolling the dough, and spraying the cutters with Pam so the dough wouldn't stick. I finally got some fairly decent shapes on the pie top, and also made an emoji and some dots as well. While putting on the egg wash with a silicon brush, the egg was pooling on parts of the pie crust top and pulling off the "cookies,," so I had to use my fingers to get the wash on, and dab the spots where it pooled with a paper towel. I preheated the oven to 390 F and put the pie in for 6 minutes. It was browning too quickly in places. I put aluminum foil over the edges of the pie plate and over the mouth of the emoji in order to make them stop browning. Then, I turned the oven down to 365 F. The pie cooked more evenly, but I still had to, periodically, put foil over the parts that were browning faster than the rest. At the lower temp, it took about 20 minutes. You had said in the video you can keep the dough in the fridge up to 3 days, but it clearly changes the dough drastically, and should probably be used the day it is made. Soooooo--I did finish it, posted it on FB, and people thought it looked cool. I would have liked to have it look more polished, (like yours), but it's cute in its funkiness. And it is quite good.
@CookwithMel19 күн бұрын
Thanks Veronica. I have a chat group on Facebook where people can share pics. I'm sorry to hear you had a hard time. I must say I didn't have this trouble...did you try pressing the dough into the dish instead of rolling out? Was just an idea given the dough was sticking to the paper. To be honest this isn't my recipe I was sharing it because it worked for me, I have since developed a filo pastry recipe that people say is easy to work with...just saying because I would use a recipe again that gave me a hard time. Thank God you're a good baker and was able to make it work!
@veronicap63209 күн бұрын
@@CookwithMel1 I'd love to try the filo pastry. So many things call for it and I've yet to find one that even gluten free that works, never mind being Keto. I'll post the pie on FB.
@CookwithMel19 күн бұрын
@veronicap6320 awesome thanks. Here is the filo pastry recipe. You can roll it really thin to make layers of filo or roll to regular thickness to use in a pie. If too sticky I dust with bamboo fiber. You need 15 percent vitamin C serum with vitamin E and ferulic acid to get rid of the sun spots. At 50, you need the clinically proven, anti-aging heavy hitters like retinaldehyde, glycolic acid starting at 15 percent and slowly increase strength. Tretinoin and sunscreen are the gold standard. Lots of info on KZbin.

Hi! How big a dish are you using? In other words, how many inches can the pie dough cover? Thanks.
@CookwithMel112 күн бұрын
Hello Veronica.the base of this pie dish is 8" ...if you don't want to make a topper you will have enough dough for 2 pies.
@veronicap632012 күн бұрын
@@CookwithMel1 Thank you, so much. I'm a little confused about the dough. I thought that you cut the dough in half in order to put 1/2 of the dough into the pie dish, before putting in the filling, and the other on the top--which I thought was the "topper." (Sorry, I'm from the United States, I don't speak English.) But it looks like you cut the dough in 1/2, and used one of the halves for the top and the other for the decorations. Do I have this right? (By the way, I made the dough about 2 hours ago and just finished the filing. I'm going to put it all together tomorrow. I tasted the filing and it's scrumptious.) Thank you in advance for your response.
@CookwithMel112 күн бұрын
@veronicap6320 you're welcome...we both speak English but I think I'm not explaining very well. You are right I did cut the dough in half. That's why I was saying that if you don't make a topper and decorate you could use the other half to fill the base of another pie. Yes the top and decorations is the "topper". I was just trying to give more options. Thanks so much. I'm so happy you like the filling and I hope you enjoy your pie 🥧 💗
