I usually add my food coloring to the butter/sugar mixture; don’t have to work the dough as much…just remember the flour will lighten the color a little when it goes in…Spritz forever!

Hi! I'm thinking your best option would be to replace the honey with 2 tablespoons of sugar (honey is sweeter than sugar so 3 tablespoons might be overkill). And I think 3 tablespoons of molasses would probably be over the top. If your dough is stiff from replacing the honey, just add a little vanilla or even water, a teaspoon at a time until the dough becomes workable and has the right texture. In the full recipe it has baking soda instead of baking powder in the recipe which one is it.

I'm glad you came back in business. I got several disk from your old site for my Mirro press that I just love. I think I'll like the new ones better since the old ones I had to pay attention at the end so I didn't put to much pressure on it and break the disc. I love our oldest Mirro which has handle that you turn. We have a "newer" one that has a knob to turn. It doesn't work as well and is harder to turn. I was waiting for you to make a video with the new press to see how it worked. We have had "newer" ones that we didn't like at all. I actually made some cream cheese spritz with your flower disk and sold them at a farmer's market right before Mother's day. That went over really well. I didn't do it again since I had to rent a commercial kitchen and the kitchen was difficult to use since the counters were too high for me and it was a gas oven so I had to light all the burners on two ranges before I could turn on the oven. I made one with lemon flavoring and filled the center with raspberry jelly and the other one I ground freeze dried blackberries and used that as part of the flour. I got an Amazon gift card from one of my students, so I want to get your new press when it becomes back in stock. (Spritz, shortbread, and teacakes are my favorite cookies.)

Thanks for the nice comment! I love the ground freeze dried blackberries idea. In my blog post about the new sets (including fruits) I have a recipe that uses freeze dried fruits. It makes a wonderful addition to spritz dough. Sweet and flavorful. The raspberry lemon combo is one I've been meaning to do! I love doing raspberry thumbprints on spritz cookies. @@impresscookiepressdisks3178 Hi Susie! Thanks for getting back and for your kind interest. I've actually just retired but my friend still has 5 years to go. However, I'm quite ready, and for the time being, my friend will be with me on the side as she only works half day... Our passion is in cookies and desserts! I'm working on becoming a pro with spritz cookies right now, as I've only recently picked it up. I think I'm doing great so far; of course your tips and encouragement give me a hearty boost. My Valentine's cookies were fit to beat any professional baker's, both in taste and design! I make many other cookies including several ethnic Greek types. We plan to work with orders; that way we only need a workshop. There used to be one such workshop near where I live years back, where the two owners took orders - desserts only. The customer would take in her serving platter, dish, bowl etc., and the dessert would be made in that. The business was a clear profit, without any potential losses. I think they had a tragic incident and had to close down. With the present market crises, we believe that this strategy will be a promising prospect.

Gougoulina they do taste really great! The awesome thing abut spritz cookies is how fast they are to make. You can literally make over a hundred cookies with one recipe of dough. And it's so easy. No rolling dough, no cutting shapes. Just load the press barrel and press out dozens of cookies. If you don't want to do fancy decorating just sprinkle on some colorful sugars or nonpareils. Takes a couple hours at most and is really fun. These do not have to be time-consuming at all. ~Susie the Disk Designer

Hi Barbie! I believe I tried it once but wasn't as happy with the result because it lacks opaqueness and sparkle. That said, if you want to try it I bet it would be ok BUT be aware, really you're talking about painting with food dye so I would be very very careful to not get it on anything but cookies! Hi Susie, painted some cookies using the Gel Color paint, diluted with some Vodka. Not like using the dust, but in some instances I can see it working. And yes, newspaper and paper. towels beneath the parchment paper to work on! Thanks for your reply. Just received disks I ordered from you, can’t wait to try them out!

@@kikimatthes2866 Thank you I'm glad you are enjoying the videos! Try keeping your shapes small- remember to think of a press as a "dough pump". Your goal is to get a good shape, so don't worry about the number of "clicks". If you're having dough issues, watch the part of the videos where I hold up and show you what a perfect texture looks like. An overly stiff dough can be softened with water or vanilla a teaspoon at a time, or a mushy soft dough can be stiffened with flour a tablespoon at a time. If you're new to this be patient! Hi Mandi T thanks for the question! It's a Sunbeam stand mixer. I actually find that this mixer (with its 2 beaters) works better for spritz dough than my KitchenAid. I've been using a Sunbeam to make spritz dough since I was a kid and I just like the feel! ~Susie the Disk Designer

@@mandit5555 good luck! Remember you can always take the dough out and knead it by hand if it just isn't mixing right. Even I have to do it sometimes. :) Also remember as you mix that you can tweak overly soft dough with flour a Tablespoon at a time or overly stiff dough with vanilla a teaspoon at a time. Those little notches might cause the dough to want to *try* and leak through the edges a little, but they're so tiny I don't think you'll have a problem. ;) Centering will help if you have any issues. Womdering if this recipe works for high altitude? Also could I swap out almond flour for regular? J live here in Boulder, CO-mile high!

it absolutely works at high altitude. Cakes and such are far more affected by altitude than cookies, generally. And I have family in Florida who test these at sea level to be sure they work there as well. I recorded these videos in Colorado Springs, so yes, high altitude is fine ;). Anthony great question. All of my powdered sugar spritz recipes are egg-free. They are a unique spritz that is kind of a blend of a spritz cookie and a russian teacake (mexican wedding cookie) but without any nuts. It's a quick and easy to make recipe that tends to be very smooth to press and consistent in its results. It's a favorite of mine!

I was so disappointed when I realized I could not get any of the Impress discs until next year. I saw them last year and was going to get some but decided to wait til this year. What is the baking temperature and baking time?

Bake in a 400 degree F oven for 6-10 minutes or until the edges just begin to brown slightly. Let cool for two minutes before removing to a cooling rack. See the linked photo blog for more pictures or details.

I inherited it years ago from my Mom, who taught me to make spritz cookies... and I find it fun to use! I have a KitchenAid, but I always use the old mixer for spritz cookies. It has character. ;)

Everyone has their own way of baking, as long as the result turns out well and they have fun in the process that's what matters. You may like to use an automatic mixer, which is awesome, and I personally like to spin my own bowl, I find it fun!
