If you use a countertop that isn't wood, and dampen the surface first before clamping the slicer, the suction will hold. If you don't have a countertop that isn't wood, try dampening the wood first before suctioning it. Cutting the chunks first and freezing the chunks for 20-30 minutes or so will help a lot because firmer meat should be much easier to slice.

I bought a junk brand compressor (Ironton, "Made in Vietnam" and it shows), and I watch your video because the Ironton instructions for break in are obviously wrong. @0:35, you close the regulator (so that no pressure is capable of flowing across it to the coupler/tools), so that the compressed air flows out the little drain valve at bottom, BUT, Ironton says to OPEN this regulator (turn it to the right, "+"), which obviously reduces the amount flow going out the bottom (which is NOT want you want for the break in). This video is my guiding light, thank you.

I've bought several of these. I found out that the battery bank holds charger for over a year when in storage. I used it also inside my house for security, putting solar panel inside window, pointing sensor towards the door. Great light

Van…if only using half the meat (2-lb) do you cut the marinade in half. Such as: instead of 1/2TB of Lawry’s salt use 1/4TB?

Great video, thank you-- Right to the point, not super long rambling on. One question: Do you use lean, lean ground beef? I'm on a carnivore diet and actually want a lot of fat if I can, but curious what the limit is on fat. I expect to make the jerky then vacuum seal and refrigerate/freeze. I do realize that having too much fat in the jerky can be a risk for going rancid (right)?

I gave up on this method. I took my Dremel and cut away some of the plastic that was blocking the area. Now I can change the bulb under the hood like on a normal vehicle that wasn't engineered by a snakey jackass.

i would suggest cutting the strips a lot larger and even thicker. The finished product has shrunk to almost nothing, You want them a lot bigger when finished like the commercial kind . And they come out better . The small strips get way too hard and too fast to control. Just my two cents and I wanted to be helpful. Do enjoy the video.

Discount is a great company when it comes to comping work that deserves it, we give away alignments at times because they are so out of spec but the person can’t afford it and you’d hate to see them back in 30k miles when I already have it up and can adjust it in 15 minutes

Van…thanks for all of your videos. Learned a lot. I’ve even gotten the Chef’s Elite tumbler. Have you ever encountered where the tumbler doesn’t shut off?..keeps vacuuming. Is there a trick?

Yep. Turn the knob on top to open vent then turn back to the middle while pulling a vacuum. Sometime I need to add pressure with my hand pushing down on the lid. I hope you like yours as much as I do. Enjoy 😁

Van…thanks for your advice…BUT..my tumbler still wouldn’t hold a vacuum…wouldn’t shut off. Chef’s Elite ended up sending me a new base replacement. Now it works great. So a HUGE shout.out to Chef’s Elite support they were terrific!!

why not spend a few minutes with a wire brush and some paint to make sure the tube will not be up against funk imo

I put them in the freezer long enough so they are nearly fully frozen, but not quite. Just regular whole breasts. Then i slice them lengthwise from top to bottom about a quarter inch thick. Makes for some pretty uniform slices that usually all finish around the same time

New guy question: The stuff in stores and in a bag is downright soft and chewy. How do we ensure that is the outcome if we make jerky? Or, is that store soft/chew the biproduct of stuff which is terrible for us?

Store brand jerky uses chipped or shredded then pressed. Some have been mechanically tenderized. The way I cut the meat gives smaller fibers vs cutting with the grain or across the grain. It’s cutting cross grain or diagonal to the grain. If you want soft jerky then you need to use ground beef and a jerky press gun.
