The red colour of beef in the US is quite worrying. is that natural? As I understand it Red No. 40 is banned in Europe. I have never seen steak that colour in my life.

Hmmm yeah that's a great note, I have a couple thoughts on this actually. First, on watching this back on multiple screens, I think SOME of the odd coloring is an artifact of color correction in post production (just generally achieving natural reds and blues universally across all screens is challenging). You can tell by comparing to the shaoxing wine red labeled bottle in the intro, which should be more of a soft dull red, but is more vibrant, probably from saturation bumping in post. The other thing I'll note is that this is a cheaper flank steak I think from Trader Joe's, which I do agree is definitely more vibrant red than most. I can't say for sure if it's due to coloring, but I do think it's interesting to compare to the steak in the bulgogi cheesesteak video from a month or two back, which is organic flank sourced from the homies at Prather ranch via our local farmers market. That steak in its raw form is more purple/blue red (also with the same color correction in post), which is interesting to note. I want detailed information on making traditional cantonese dim sum style chicken feet. Brown and everything, with a good pedicure. I'd suggest using the subtitle function on KZbin instead of burning them into the video. The burned-in subs are sometimes hard to read because of the text being small and blending into the background, and they also contain a number of speech-to-text errors that could be edited in a separate subs file.

Yeah for sure! I find them useful for anything requiring long braise times, like curries or stews. It just helps keep the wok steady when it's filled with a lot of stuff (especially important for deepfrying in a wok, too, cause u realllly don't want that to spill). I personally don't love using the wok ring for every day stir frying, just because it gets in the way of tossing the wok. I prefer to have the round bottom directly on the cooktop, cause it lets the wok be a little bit more agile and easier to move. Really it comes down to personal preference though, so I'd recommend picking one up and seeing how you like it...!

To improve the flavor, stop using cheap industrial lubricant. Yes, it'd been cleaned but when you heat it it still becomes toxic. Use butter or lard for more flavor.
