I followed this recipe in September and made 6 jars. The men in our house are already on their third so I am thinking... as I have some ripe frozen tomatoes in the freezer which I was planning to preserve for stew etc. I'm now going to try out this same recipe in the hope that they will enjoy another good batch. I would hate to deviate too much from your original recipe as the whole family think it's so scrumptious (giving it 5 stars) So I will be making a small amount first by straining the defrosted toms to get some of the excess water out before chopping. I am not expecting it to taste exactly the same - but for me it is well worth a try with maybe a few tweaks in preparation and cooking time. ):

I don't bother with all this fancy stuff like salting, adding spices, sugar and heating the brine. Some years ago I carried out a few experiments where I tried all these things. My result is simple is best. Peel onions, wash them off, put them in a recycled jar add malt vinegar and the job is done. I do use some parchment paper between the lid and the jar because the acidity can eat the metal lid. Taste is subjective, so carry out your own experiments to see what suits you best.

Shame I’ve used all 10kg of plums. Just made apple scrap jelly. For years I’ve been getting rid of the cores and peelings. Bumper crop of apples this year. I used the spruce eats recipe. I got about 4 small jars from 2 buckets of apples. The colour is outstanding. I’m sure I had it with quinces once on a ploughman’s. Compost still got the leavings. 😂

Glad you liked it. Unfortunately I've never really grown many aubergines so he only way I've kept them was to roast them and mix in a tomato sauce, then freeze in portions for use in vegetable lasagne/chilli/spaghetti.

Would it be possible to use malt vinegar/red wine vinegar to give it a darker colour?

This recipe does use malt vinegar so red wine wouldn't make it much darker. I haven't tried it but if you really want a darker chutney you could try using 50% Balsamic vinegar in there. It's going to be an intense flavour but Balsamic and tomatoes is a classic combination.

So glad l cane across your video....first time lv grown tomatoes and not one has turned red due to the abysmal weather conditions....so lv gathered all the crop in because the temperatures at night have been 5°....so l thought wot l need is a recipe for green tomato chutney...ta da..l found you lol...cheers...hopefully next year l will have a better crop...👍

Been another funny year for tomatoes! They have slow ripening again. Picking a bowl every two or three days. Looking after my sister in law's as well so have been doing chutney so they don't get wasted. 35 jars so far.

Should be a bit like a slightly thicker sweet chilli sauce. You can dip a poppadom in it without it breaking off if you are careful.

That's a hard one as I've never used anything else but understand that the dill flavour is not everyone's cup of tea. I'd go with chives as it adds in the freshness, would definitely work and will add a subtle onion flavour

Much of the bitterness of green pepper is in the skin. You could chat it and remove. Or if you want to cheat replace the red wine vinegar with basalmic. Although the red is more visually appealing.

Hi, thanks very much. You can absolutely freeze the unbaked ones. I find it best to defrost them in the fridge overnight before egg washing and baking. That way the pastry stays firmer so less likely to split.

I'd love to try this but roast everything but the pancetta. I'd render the fat out of the panchetta first. Add all the roasted ingreedients to a blender with the gorgonzola and make a purée while adding a little of the rendered fat as to let it all congeal. Do pretty much everything else the same. Plate the gnoochi, add the purée, then garnish with the pancetta and more gorgonzola! Either way, I think this recipe would make anyone fall in love with the chef!

I suggest you use healthy coconut sugar. It has a caramel taste to it and it is brown n healthy unlike all other sugars.
