what’s the difference between this cutting board and my normal plastic one?

Probably the main difference is not having all those microplastics end up in your food. I guess they can actually cross the blood brain barrier, so people are trying to avoid plastics. These are bamboo, which I guess is a type of grass which should not be as harmful. : )

How do you clean them?

They just wipe off, you can also wash them in the sink. Nothing really sticks to them, so they clean very easy. : )
