This is a great tecnique and extremely effective, another variation is when rotating the fingers (towards the body as shown) bring the persons fingers up under their own armpit. Any pressure on the elbow (when securing agains your chest) will cause extreme pain and bring the person up onto their toes, this also negates the need to use your other hand to cover the fingers.

I personally believe any training received is better than no training at all, but some of the techniques shown required too much fine motor skills. And if you are trying to take a knife from someone you will be stabbed or cut. That being said good luck and keep up the training.

Finally, although you mentioned not to lead the subject by the cuffs early on, it should be verbally reminded "I take the subject by the arm and lead him to transport" as it is not visually apparent if you were holding the subject by the cuffs or by the arms.
