12:15 Oh damn, yeah the name of the cheese you put ??? is called Paillasson. It's a firm cheese, pretty salty (I mean, you tasted it, so you'd know xD) that is supposed to be grilled. I would say it's pretty close to something like Halloumi cheese. And it's from Orleans Island which is very close to Quebec city, on the St-Laurent river. Quite a big island actually with a lot of agriculture and local produce, including the cheese maker for the Paillasson :)
