i know its kinda late but you can candle them and see where the air bubble is that is the big end. Also, it will reveal cracks that are not apparent with out it.

Painfully long video! Unable to see the entire process, I wanted to see the entire mixing, dumping batter, etc…can be dense, heavy cake, IMO…BUT TASTY…and removing cake from pan, we all have mistakes but angel food/tube pans it happens to all of us.
