Is there no problem with moisture bridging across through the packing? Assuming cold roof?

where is the airflow to vent the attic? You didn't show enough of the knee-wall attic space to explain your method.

If attic cap has a ridge vent and a couple gables that's most likely enough ventilation for a little cape attic. Kneewall itself probably has soffit vents or a gable vent as well

Depends on the job, generally we insert the house until it hits the wall on the far side of the cavity. Then we pull the hose back towards us as it fills to ensure the entire area is being packed. Thanks for the question!

Great explanation and video. Why not use fiberglass blow in or Rockwood? I feel like newspaper is a super cheap insulatuor that would flatten right out over time creating a gap once again.

It's very unlikely any settling of the cellulose will occur, because it's dense packed into the cavity... squeezing out all the air and completely filling the cavity.
