That chicken stock looked really good. Just from video when it has to do with your Jam. I say that you may need to add more pectin. Sometimes the recommend amount is not enough but sadly you will not know until it sets or doesn’t set. I also bet the waffles and the plum chicken was awesome.

Thx! Love having the stock on hand and ready to go when needed - and we use it a lot! Good to know on the pectin. It probably didn't help that it was expired :l The unset jam is really good on french toast and makes really good asian chicken. Been making that about once a week since I canned the jam. :)

Ms Amy what are your thought about micro- greens. I have been looking into it cause I can grow them inside the home in a sunny place from my understanding which is not much. Would you say that have the same amount of nutrition as a number plant? Also, dandelion Tea is really good they say.
@mountainsidewithkenandamy
@mountainsidewithkenandamy 11 күн бұрын
I like growing the microgreens - they are better for you than the full grown plant from what I understand. Lots of nutrition packed into a tiny plant! What I don't like is that its not really sustainable - Its not like I grow the plant out to full size and harvest the seeds and plant them. You have to keep buying seeds. Yes! Dandelion tea is really good. I also heard dandelion fritters are good too - I have been meaning to make those but haven't yet.

Amy I was wondering do you always keep your laying hens up are do you allow the to somewhat free range? I know you said you have those 40 in there to get them healthy. Will you let them out as soon as you feel they are ok to be with the others? Also, i love your milker. I know that you have to separate the milk in order to make butter. Do you have a video of you doing that? Sorry I am commenting so much I am just watching your videos and love what you guys have done in the short years you have been there.
@mountainsidewithkenandamy

Hey Logan! Love all the comments and questions - ask away! Yes, I wanted to keep them a bit separated from the main flock for a few reasons. One to get them used to their new surroundings, another was we needed to get the quality of the eggs up. When we bought them, the yolks were light yellow and many of them had shells that were really thin. They were in a dark environment with no access to green pastures. We upped their calcium, got them some good non gmo feed, access to green grass and fresh fruits and veggies. We will probably combine the two flocks if we don't get another coop set up in another area of the mountain. We had some folks that live here that were going to get a coop but it fell through but I am still hopeful that we will have another coop further down the mountain by the cabins. :) I will make a video soon of using the cream separator using sheep milk. I'll also show how to make butter and sour cream. I have been asked to make content of making duck pot pies and I need to get on that one too!

@@mountainsidewithkenandamy I can't wait to see how you do the seperation because I have never seen that. I have only really used and worked with Cows milk. I was going to say with the amount of Chickens you have you can put some beside every cabin and they can have fresh eggs LOL. I wanted to also say I love the views that you have from your porch.
@mountainsidewithkenandamy
@mountainsidewithkenandamy 12 күн бұрын
@@loganjackson1335 Cows milk is good in that you dont need a separator for it. Just put it in the fridge and the next day the cream is at the top! Sheep milk is naturally homogenized so it doesn't separate easily. lol! We sure could. Just need a few coops and electric netting and we can have several set ups around the property!

@@mountainsidewithkenandamy Amy how much butter can you get out of a gallon of cream from a sheep or can you can you even measure it like that? I learning. Lol
@mountainsidewithkenandamy
@mountainsidewithkenandamy 12 күн бұрын
@@loganjackson1335 Going by memory (which mine isnt good - lol) but its a lot of steps to get to the butter. Like a gallon of whole milk, separated is maybe a pint or 2 of cream, then making the butter, drawing out the buttermilk, it was about a cup or so that we ended up with. I heard a saying a while back goes something like sheep milk for drinking, goat milk for soap making, and cow milk for butter and cheese.
