Don't forget to pay dry. I enjoy I think called 20-30's? Are fresh, dry doesn't mean dry, just natural liquor, I put on towel and put towel on top, a sheet pan on top of that, get great sear, cook in batches, taste great, I season them s+p, in squeeze bottle have clarified butter, lemon and orange juice combined, shake each time, deglaze each batch, pour the pan sauce on top, better than u10's imo.

Great video. He gives a lot of tips I learned here and there on the internet =) I wish there was the recipe of the sauce as well. One tip I would add for non-professionals like me, is 'mise en place' (french for everything in their place), that you can see in this video: always put all the ingredients to the recipe in front of you, where you are going to cook, before you begin. Especially if you are prone to forget things, like myself. And I mean everything: the butter, the salt, the garlic (already minced), the utensils, the plate where you are going to put the salmon once you take it out of the pan... Put it all in font of you and go over the recipe checking if it is all there.

As a lifelong eater of wild caught salmon I was sooo skeptical of farm raised salmon until we tasted faroe island salmon. oh. my. god. it is seriously the filet mignon of salmon and it is sustainable and recommended by the Monterey aquarium sustainability site! We are very fortunate to have a local seafood market down in central VA that sells it. 5 star.

Faroe Island Salmon is probably the BEST salmon I've ever tasted and been buying it every single week since ProFish started offering it to the public, I mean every single week because it is that good! It is that delicious 'fatty salmon' rich in tasty Omega-3 rich fish oil and barely need any additional oil. Just about perfect! Thank you ProFish for offering this amazing salmon!

Please remove the rubber bands before cooking, unless you wish to add rubber band flavor to your lobster. Personally, I find the tails take longer to cook than the claws, as there is much less meat inside the claws.

Oysters in bags o the government can keep track of everything. When you catch them wild they don't know how many you catch. So they have closed oyster bars all over the area so watermen can't catch them and it makes the price of the other oysters go up. Just about government control to tax every penny. You got oyster beds filthy with oysters just laying there. The government gets involved and they're just going to fuck it up.
