Should've just held your lane, you made this swing twards the sidewalk like you were letting him pass, then you picked up speed as the car did the same to make a pass, and then you went right back out twords the road without even looking over your shoulder. You do have a responsibility to try and ride predictably, and you aren't doing that swinging around like that without being aware of your surroundings. At least that car did leave enough space to avoid hitting you.

You got a flip flop hub if so you should put it on fixed with some flat peddles and straps makes riding so much better it helps massively with riding and getting up hells and keeping speed

Too much emphasis is placed on name brands. They are not needed, and other parts are just as good as name brand components. Sometimes better. More than half of my bought items are from Aliexpress. At half the price of things here in America, you're going about your rebuild correctly. Looks great.

My brother and I witnessed these same water bomber helis up close a couple years ago when we rode our bikes to the newer bird hide at bibra lake. Pretty cool to see them do their thing and get water from the lake

They can't sell a single speed bike for 4,000 dollars. It's all about greed. I work on my own bikes. If I need parts I get them from Aliexpress or Amazon. I also collect old bikes and salvage parts. Yeah, I've ran into the same kind of dealer.
