The best eat it raw, slice to bite size, marinade it with calamansi juice if none, lemon, then add thinly sliced ginger red onions, sprinkle with salt to taste and also pepper, then add little bit boiled bile then add chili mix then eat.

Please don't do this. Folks. Salt removes moisture from meat after sitting so long. Salt for 5 mns or less.

It works better fyi if you buy deboning knife then a chef knife it makes it looks pristine compared to how much fat you left on that. And skirt steak isn't in the end worth buying it's a tenderloin or inside round.
