I’m having trouble keeping the temps stabilized. It goes all the way up to 300 and down to 200. I have it set to 250 and using small splits. Same setup almost.

Seems like the 2d setup is a lot of work just for one area. I have a hard time thinking of a time I have graded anything with one slope or flat. 3d is definitely the way to go. Topcons MC Mobile system is affordable and integrated.

Nice setup, I am currently looking for a 500 gallon tank to build a reverse flow pellet rotisserie system with a water tray setup where can add water from outside, then the plate in the bottom for the reverse flow system angled to catch grease and drain it to a shutoff valve where can have a bucket to catch. This will be on a trailer and also have a mounted generator to provide the power. The thinking behind it is to help support different Masonic Lodges with cooks for charity. Do you also have fire bricks in there to keep heat? Just a thought, maybe when wrapping keep the door closed till ready to put back in this would keep the temp up until ready to put the meat back in,

I just put in a vertical baffle aka “scoop” for my brazos as well. I have seen a few people drill a few holes in them to let a little more heat through, seems getting higher temps like 300 can be a challenge without them. Did you put holes in yours?

+@thomasquantz5173 that’s the beauty of it , for the first 4 hours of the cook when the meat is taking in the most smoke I primarily run it like a traditional offset adding splits like u would a traditional. The pid controller automatically reduces pellet input while still controlling temps. Then when I’m ready to let it ride and get some sleep, I just stop adding splits and the pid makes its adjustments to pellet input and will still maintain the set temps throughout the rest of the cook

Could I set up a spread using planer boards with live bait and Mini Mack's, or would the slower speed for live bait (<1 mph) impact effectiveness of the Mini Mack's?

+@CharlesMoore-ve9wp you absolutely can the mini Mack’s will swim down to about .7-.8 mph depending on current. The biggest difference will be the depth they run at that speed. Works great.
