Do you know anything about processing chickens with bumblefoot? We just processed our own chickens and most of them have deep sores on their feet and we were wondering if we could still use the feet or if we should just throw them away...😔

For now, I’m gonna do canning salsa last year. We made salsa but we didn’t have as many tomatoes this year. I’m not sure why we had record amount of rain here in Minneapolis. It was beautiful and everything is green, but my husband said it might’ve been a combination all the weeds we got last year from a drought. Yes, it was crazy. Was like living in the west we got the weirdest weeds. I’ve never seen in my life come through the previous year so we did that and then tomato plants. We’ve got our special breed of the master gardeners of Minnesota and their bigger than a cherry tomato and they’re like orange color. They make the best salsa, but they bloom, low lowAcidy. I’ll have to check into that variety of tomato. I’m always looking to try new types. Our weather was hot and very dry this summer. I’m probably going to have to get a few loads of cow manure from our neighbors to help amend our soil. I do have a video on my channel on making salsa. Thank you for watching my videos!!

I saw a dehydrator at a garage sale last week and I should’ve got it. I just thought oh it takes up so much space but then all this week I was thinking of things I could try to make with it. Groceries are getting expensive. I gotta start getting resourceful.

Dehydrators can be pricey, but well worth the investment. When our stores have sales, I will buy extras of bananas, strawberries, and other fruits and will dry them. Great for in oatmeal or just snacking. I also use it for a lot of garden veggies/herbs too. I’ve seen them listed in my area on facebook marketplace before pretty reasonably priced.

I was following the recipe from my Ball book. And, no sugar made it taste awful. It was very bitter. Even though it’s not a lot of sugar used, it makes a huge difference in the taste. You could try a lacto-fermentation with the zucchini. That way doesn’t require any sugar. Hope that helps!!

Is the 1/2 head space measured from the bottom on the threads or from the lip of the jar?

If you don’t have an all in one debubbling/ headspace measuring tool, you can gauge headspace based on the threads of the jar. One inch is at the bottom ring or neck of the jar, the next thread up would be 1/2 in and then the top one would be 1/4 in. There are really good diagrams of this on google images if you need a visual reference.

The only reason I did was just to follow the recipe. I’ve canned other things like spiced peaches or red hot cinnamon apples where they are left in the jar. Hope that helps!!

That’s a great idea to just do 1/2 of the syrup especially if you are canning a small amount of peppers.

Great question!! I would say several weeks, however, I always check first for molding, and smell it to make sure it hasn’t turned before I use it.

Great question!! I like to drain them and then fry them. Or, make potato salad or mashed potatoes. They are also good to make a potato soup with. I love the versatility!!

I use Italian seasoning on them. I don’t use that much on each tomato. However, if you rehydrate them in olive oil, the seasoning adds to the taste. It’s a personal preference. You can dehydrate them without it.

I plant a few different flowers. Marigolds are good to deter pests and attract pollinators. I also plant poppies and calendula. I started a medicinal herb garden this year, and borage produces beautiful flowers and so does marshmallow root. I have a tendency to plant some things too closed too..like cabbage. Having a planned layout does help. Hope you are having a good harvest this year!!

I don't have a dark place to store my jars, would it be ok to store in fridge after jars have cooled

I honestly don’t know the correct answer for that. I personally wouldn’t store them in the fridge. I would check Pinterest for creative ways to store your filled jars. I have a friend who purchased long totes, places her jars in those and stores them under her bed. I hope that helps. If I come across anything I’ll let you know.

Many years ago I met an elderly Romanian woman who used soaked tapioca to make her jam instead of boxed pectin. I tried it with mixed results, some so horrible they were tossed because I never had her "amounts". I recently have started using "Tapioca flour/starch" with much better results because I can add diluted amounts (water & starch) and cook it until I get my desired set-up result. I can also grind my own tapioca to make my own flour/starch.

@@willsmountainhomestead You can use it to thicken your fruit pies too. Just make sure if your using whole pearled tapioca that you soak it well first. My last batch of raspberry jam I did half whole and half flour/starch.

I do!! If you look through my videos you will see one called zucchini “apple pie” filling. It was from last summer. We love that recipe. You really can’t tell that it’s zucchini.

Sounds good until the eggs start hatching that you don't see under all the leafs. When you get the larva's in the stems you might as well kiss the plant goodbye. I'm happy for you that you can sit in your garden and wait for the bugs to come to suck them up. I wish I had the time to do that. Good luck. Green ways always turn into spray ways when people wake up and see the light.

I do check the underside of the leaves daily for eggs. I have found that packing tape works best to remove the eggs without damaging the leaves.

Those can be omitted if you dislike them or do not have them on hand. It may alter the taste of the final product.
