If it's starting to turn then you're probably doing a half square knot instead of a full square knot. Fast forward to the 'spiral knot / half square knot' to check that.

Watch my tutorial for 'macrame end knots' which you can find in my channel or follow the link below: kzbin.info/www/bejne/fZbRaGWkhKimo6c You can also tie the last knot a bit tight and then brush the cord to create a fringe (if you've used single or 3ply cord - this won't work with braided cord)
