I usually put the lid on sideways, so that any liquid left in the gaiwan after a pour has a chance to cool down, and less of a chance to overbrew the tea accidentally. Especially with more 'sensitive' teas like green teas I have found it does make a difference.

I very much like this approach. It is indeed hard to find genuine products sometimes, especially in the west. I too have found many 'no name' green teas from guangxi, that were absolutely incredible in flavor. Fame (and associated price) don't always say everything. It benefits everyone to share more of these experiences and broaden the tea market.

Wow what an amazing coincidence! Just stumbled upon your channel today. Earlier this year I visited the tea museum in Hong Kong (Hong Kong Park, close to Central. A must visit if in the area, some beautiful pottery and entrance is free!). The museum also features various books of tea, free to read for the public. Among the books I found this exact book, and was blown away by it. I asked the museum if they sold it, but sadly not. Ever since then I have been trying to track down an english copy here in Europe, but to no avail. If its still in print, and know where it could be purchased, I would immensely appreciate a heads up!

17:00 I have hiked more in the park and I can confirm that there's many, many more beautifully impressive hikes. Well worth to go just for the hiking alone, trails are maintained quite well and outside of the 'famous' trail to the 6 mother trees, the waterfall near there, and to some extent the monastery near Ma Tou Yan almost no one actually hikes there (at least when I was there). The views in foggy weather are probably the best, straight from an ancient chinese painting. Personally I especially liked the more southern parts of the area. Da wang peak is very easily accessible from the entrance and has a magnificent (but tight) crevice to squeeze through. There's a little viewing spot somewhere between Tianyou and Da wang, which is undoubtedly the best view you can get there, with as a big plus no one else being able to get there. Still, you cannot go wrong. Delicious tea, great food and beautiful hikes, what more would you want! Just dont get scammed by the tourist bus... They try very hard to convince you that you really do need the ticket to get around there, but that's simply not true. The park (no longer) has an entrance fee, and hiking through the area is very doable. Only get the bus ride if you want to see all the big sites in quick succession, or go rafting (as that's quite a distance to the start).

Ah! I don’t take any percription medicine for probiotic health,but I do eat a lot of probiotic food,and tea is frequently consumed alongside it. I’ll definitely be waiting that half hour or so,from now on. Very interesting info in this one.

Hi fellers , Last night i found this pot in my store room , it came with a fancy red booklet , it says its yixing zisha hu , made by this person called ...江建祥 jiang jianxiang in april 1996 apparently is from jiangsu .... do you know anything about this ? could it be valuable ? oh under the 品名 it says 黑纱古井壶

I would like to say something,I may have said it before,but it bears repeating. A while back,I commented on another video,regarding Oolong,and I said something to the tune of ‘eh,I don’t get Oolong,it doesn’t do it for me’ Ohhhh how I have learned the error of my ways! Oolong is a delight beyond description. I am currently enjoying a Duck S***t. I brew in Yixing all the time,just because it makes me smile! There is rarely a dinner in my home where this fine tea doesn’t accompany it. Even with pizza,Oolong marries food.

Zhen, you don't have to explain yourself, but need to learn the politics of it. For many years, my country and Indonesia agricultural industry has been attacked by western countries, after being colonised by them for a few centuries. They said our palm oils is not good. They said our farmers are clearing jungle for plantation. They said we should preserve habitat for wild animals (orangutan). They will invent whatever reasons to discourage palm oil consumption, so that they can sell their edible oils at higher prices.

Zhen, thank you for the video, you handled a difficult topic well. Don't forget that we in the States have been fed anti-Chinese propaganda since, probably, 1949 on; I remember it from when I was in primary school in the early 1960s on to today. I don't know about Canada, but I would guess it wasn't as bad there. The cultural differences between the West and China in interesting. I've come to the point that when I see something that bothers my American sensibilities I first ask if the issue is that I don't understand Chinese cultural. As an English teacher I would listen for my students' grammatical and word order errors, because it taught me something about the Chinese grammar and word order. For example: "I very like." Ah, 我很喜欢。(Wǒ hěn xǐhuān.) I suggested that my students listen to my Chinese grammatical and word order errors to learn about English. Another great cultural difference. My students would say to me one of the big differences between China and the US is that they knew that the media in China was controlled and not free, we Americans are naive and fool ourselves into thinking that our media is free and not controlled. As I critically watch our media, the more I agree with my students..

Would be just as easy (and correct) to say that the problem is that people still watch Fox News. I think it more accurate to say that the problem is that people watch the news provider they prefer, without seeking differing opinion or applying critical reasoning to what they're watching. I'm hoping that's more of what you're implying. Regardless, we need to remember to try and challenge ourselves to consider other viewpoints and dot dismiss them out of hand.

I figure slurping aggressively turns your tea into mist as it enters your mouth so you get more flavor. Pairing this with a nose exhale brings out the floral notes when I drink oolong.

The white that I have the most experience with is Shou Mei,I tend to find that 90-95 Celsius works beautifully with these leaves. I must try 100 degrees next time,I never have,for some reason😅

Sorry, I'm a beginner. I would like to know if with a loose leaf Bai Mu Dan, the first infusion is shorter than that of a tea cake? Loved the video - entertaining and informative.

For loose leaf, I´d gor for 15-25 seconds, but it's really up to you. The fun in tea is in experimenting. For Lose leaf Mudan, I'd also suggest getting cooler water (85-90°). But as the videa says, each tea is veryy different and also..each tea drinker is different, so try more styles to see what you actually like!

By the end of the 6th infusion, the tea wasn't fully done. I had 2 more infusions, steeping time was 2 & 3 minutes. But I didn't capture the infusions on camera. So be sure to taste your tea and don't hesitate to keep going if the tea can offer more steeps.

I work in water treatment and purification, and this is one of the many reasons we use reverse osmosis water for drinking and brewing tea!

Great video as always Zhen. However, there are so many green teas to choose from. Are some teas better for hydrating during exercise? Also, how to brew? I can't stop and brew in my Yixing Zisha every 5 minutes LOL 🤣

Excellent question! If you want a higher caffeine level, a lower-end green tea is a better choice. Otherwise, early plucked green teas provide a better caffeine/L-theanine ratio. Intuitive brewing tea is much more fun and enjoyable experience. Rather than the highly technical and box type of approach. Intuitive brewing doesn't mean your leaving traditional process. It just means your not afraid to experiment and are open to new experiences. 😊

Very nice video. The people that control the fires for the roasting always interest me. Also at the end where the boiling water is put into the container where the tea is roasting a bit is something that had never seen before. I did go and watch your old video where you had bought a small pot and roasted some tea. That process seems to be reminiscent of the old Tea Battles where the participants showed their individual skills in brewing tea, but over real fire instead of electrical heat. Be sort of fun.

I thought it was a lack of a teapot, but after picking up a mutton fat pot online, I still noticed this. I didn't even wait until the end of the video to order a normal spouted kettle!

I usually pour cold water in a bottle with the tea leaves and put it directly in the fridge. I feel like it works well with teas that have more elevated and fresh notes like taiwanese green oolongs, green teas or some black teas. Of course The taste is definitly lighter but it can also cut some astringency or bitterness which I kind of like on hot summer days, feels more refreshing!

I brew tea bags like Lipton black tea in room temperature water and add ice and almond milk. I save the loose leaf for my Gaiwan and hot water.
