if grass and greens are chelators then all grazing animals would be borderline worthless to consume.. The more grass fed they are the WORSE their nutrient profile would be, and we just dont see that. I agree with just about everything Jason says except that greens are chelators. I think going vegan you're not getting certain minerals into the body, period. And you combine that with antinutrients which can chelate or block certain minerals... But I dont feel it's because greens themselves are chelating agents.
