its very traditional. If i was being a huge food snob, I'd say the flesh is on the undercooked side, but it's impossible to cook it perfect without burning the cornmeal, so you gotta balance it like this. You see our ancestors used corn meal because that's what they could grow. The heat and humidity do not suit wheat or other grains common in Europe at the time. They used corn to feed themselves and their animals, and celebrated the tradition of learning about this staple food from the Indians. It's beautifully simple, you go to the creek and fish and you grow corn in your yard and you make wonderful dishes like this. God bless the south.

Much better using the same amount of grease that you’ve used frying your chicken or chicken fried steak or breaded pork chops instead of butter.
