火太大了,需要將溫度控制在175度左右。 你應該是家裡的爐台(天然氣),最小火只能集中在中心區域,無法讓鍋子受熱均勻,導致溫度上升太快,所以糊了。 解決方法就是需要偶爾移動鍋底,使其均勻的受熱,保持適合的溫度。

Tried it…mine sucked. They were like thick pancakes. The taste was good though they just didn’t get tall and fluffy

The key to soufflé is to whip the meringue to the right dry foam and keep the temperature. Preheat the pan to 175 degrees in advance and control it between 170-175 degrees. Squeeze the batter into the pan, cover it with a lid, and fry it on each side for about 4 minutes. It will basically not collapse and will not become a pancake. I wish you can make the perfect soufflé pancake!

可以使用無麩質麵粉,但有一點需要你知道的是可能會影響口感,煎餅較為密實。 可以使用其它的糖替代。但椰糖的味道較為濃鬱,可能會影響煎餅的整體風味。 而羅漢果糖是不會像砂糖那樣增加蛋白穩定性,但它仍可用於打發蛋白,效果可能不如砂糖穩定,需要加一點玉米澱粉增加穩定性。

蛋白霜打至乾性發泡,不放裱花袋用湯匙形狀(沒那麼圓)也還行,用裱花袋形狀更好看

想問一下,為什麼我的面糊放如擠花袋裡面擠出來是流體狀的而不是棉棉的擠出來又高高的,而且我的蛋清也很棉 我的比例也是照著這部影片做的,但做了兩次還是一樣

蛋白沒打發成功,可能的原因是: 1.打蛋時混入了少許蛋黃或雞蛋不夠新鮮 2.洗了打蛋器沒擦乾水份(無油無水) 3.打蛋器的功率不夠 拯救步驟: 1.放入冰箱冷藏15分鐘(讓蛋白狀態更好) 2.加入幾滴白醋(檸檬汁)繼續用打蛋器打發(也可以加入1/2茶匙泡打粉或玉米澱粉,增加成功率) 3.打到有一點小尖尖時加入些許白糖繼續打發 4.直至提起打蛋器,出現火把狀的小夾頭,這時,蛋清打發已完成,合格的蛋白打發好後,呈固態,很粘稠,即使翻過來也不會掉。
