I do not clarify/strain my grape juice after making it, i only remove seeds/skins. So the juice ia very thick and tasty, making awesome jelly/jam

Fantastic job! (: I don't understand why Wilton would put such complicated cookie cutters in a "teach myself" kit for beginners. Cookie cutters with straight edges are loads easier to neatly decorate with royal icing, and to learn to decorate as well. Your icing looks amazing for your first time creating it! Great job! 💕

Never ever speed up the proofing process. Let it happen naturally. Speeding it up puts your yeast in shock and gives it an unbalanced rise.

Problem is we keep the room at 67F...so yeah, we need to put it in the oven here with the light on. You're not "speeding things up" - you're just putting the dough where it will actually rise.

the history of fruit spreads fascinates me. I read up on them that at least as back as the colonial days, they were originally invented out of not letting surplus fruit go to waste, and yes, eating in those days was more mercenary and cutthroat so however you ate, you'd do anything. apparently one little jar needed a large amount, like a pile of wasting fruit to fill it.
