Mo this was cool. I have been using LEM burger bags which I run through stuffer. Goes super fast. I am 73 and i did 24 lbs. of brisket, strip steak and rib eye yesterday by old tired self yesterday. I am a Texas boy, Are you in SC?

I used to do a 50/50 mix of ground game (deer or elk) and ground pork butt. After viewing this video, and the ratio of pork fat to game you used, I went to 1/3 game and 2/3's pork butt. Great improvement in the taste! Thanks for the video!

I roll the top edge down fill with meat and roll it back up and seal without any fat or meat in the seal. I will try your method to see how well it works.

Sir, I gotta tell you, your cold aging venison WORKS! I do it different than you tho. I thaw the venison and trim it up real good. Then I put it on a plate with paper towels in the refrigerator for several hours even overnight. All the gamy taste goes out right of it! Deer seasons a month away here SC! Our deer have a really strong gamey flavor in this area for some reason. That’s basically why we try to change the flavor into something that actually enjoyable too eat. Thank you for your comment.

Bought a second fridge a long time ago to quarter and cool game in. Get them skinned quartered and in there asap when I get them home. I also get them in the freezer in no more than 3 days

I have found that deer in different parts of the USA have a different way of smell , and taste.Where we live, the deer have a strong smell , and taste so therefore it requires different times in the cooler for us too get the smell , and taste the way we like it. I go strictly by the smell of each deer.So whenever I cut deep into the meat , and can’t smell anything it’s at that time I process the meat. If 3 days is working for you that’s great, I wish 3 would work for me. Your on the right track about getting them cooled down fast for sure. Thanks for help , and comment👍.

@@Buckski00buckshot no problem. Funny you mention difference in taste. I’ve noticed very varied flavors from deer in different areas of the same state, sometimes even from different areas of the same county.

I like to skin and quarter immediately...quarter the animal and hang in garage/shed/cooler...under 55° weather or lower...I hang for about 8- 21/24 days...should look dark red/black and smooth to the touch (builds a sweetness and tenderizes) fillet knife off as little as possible And section or cut ....some times I hang full carcass (skinned) and my timer for the hang is mold...when the mold shows usually in the rib cage area it is maxed(I think I hung one small buck for about 30 days in 30-40° to get small spots on inside of rub cage ) Sweetness and humbleness! I am not a doctor....try it !?

I buy it from a large grocery store in our area. It’s the same season they use for their breakfast sausage. Talk with about any butcher at your local store, and most of the time they are glad to order for you.

@@aaronm9800ost of the deer in our area have a very strong gamey flavor, that’s just not very tasty so too speak. I had one person tell me the smell while cooking stink their whole house up , and they fed the rest of their meat to their bull dog. I’m not saying every deer around here is like that ,but they nearly are. Anyway aging the meat, and adding the beef fat gives it a nice beefy flavor ,that most of us southerners enjoy. Hope this answers your question.

Just make sure it’s 40 degrees are under before placing your meat in. Once you have the meat aged , I can promise you, it will be the only way you will want it. It’s like that for us , anyway 😋🦌.

Thank you for your comment. Some venison in different areas have a strong gamey flavor, that’s why we are basically doing what we are doing. In areas where the venison has a good taste, I wouldn’t do it either, so I see where your coming from.

I get it from a local meat company , they call it different things , like kidney suet, tallow, etc, at least at that plant.

Good video! For the past 35 years, I've been grinding elk, using venison grind mixes. I use a different grind each year. This year I used a grind of 2 parts lean elk, one part of 80/20 custom ground beef, and one part ground Boston Butt. Mama likes it. I'm going to record your mix and maybe use it in the future. Thanks for the video!

I kill deer to get the venison because I like how venison tastes and I like it more than any ribeye you can buy. I don't know about deer in other states, have no clue, but in Texas if you make a clean kill and take care of the meat it's just wonderful. Now having said that, other people I know and even hunt with do not particularly like the taste of venison so this is going to be right up their alley and I'm going to share this with them. Good video.

How to make venison taste like beef? Ok well, when a deer and a cow love each other very much, they'll go off into the jungle and press their bathing suit parts together. If everything goes right, approximately 9 months later, a delicious baby dow will be born.
