As he flicks through the deck he purposefully forces a certain card. He does this either by leaving the card below the forced card out jogged this makes you see that card for a bit longer, planting it in your mind. Or he has a pinky break and the same goes. Then he finds the forced card puts in the top of the deck and at 2:13 you can see him folding it. He then misdirects her by speaking and pointing and plants the folded card in her watch.
