Oh man that's torching I am drowning in my saliva!

I am an American.. Blue eyes in the orient... And I lived in Thailand for years.. This is one of the wonderful true street foods you can get almost anywhere in Thailand. I absolutely loved it.. I bought it at least once a week, if not more...! The bones of the fish just fall away, the flavor of the fish is preserved perfectly, not salty to the taste at all.. The herbs and flagrant veggies they pack into the stomach, flavors the meat of the fish.. The sauces and fresh veggies make it a great 'share' experience. The only problem is:... I can't get it here, in the US... Sad but true...!

I was recently in Bangkok and had the salt crusted grilled tilapia several times. It was amazingly moist and very tasty, though not at all salty. I want to learn how to cook this at home but I understand it’s best to remove the gills with knife cuts, and then remove the stomach through the hill cuts only without the additional side cut to minimize the chance for salt to become absorbed into the meat and make the fish too salty. Now I’m really missing the Bangkok street food, and also the street food had during my stay in Laos before flying to Bangkok. Cheers!

Definitely street food, more a tutorial on "what to do with leftovers" than a chef in the kitchen. What surprised me was seeing them use prepackaged noodles! Its a full restaurant, not a sidewalk vendor!!.. OMG!
