I used to make brandy snaps at a place called concept food in Leeds back in the 90's, we would produce anywhere between 10,000 and 30,000 brandy snap baskets per shift for several different customers, as a 18y/o lad saving up for uni i could have had a better job to be honest but i used to be a 'top mixer' - which meant i made all the brandy snap mix before it went into the portioning machines hopper, roughly 4 litres of the stuff every 4 minutes 😄, we used golden syrup instead of the caster sugar but essentially the same mix, more sugar and whisking also to exaggerate some air into the mix, that increases the flakiness and breaks down into the chewyness that we all love. After i left for uni, i didn't touch one of the things for 20 years lol

Haha! Excellent. That must have taken some serious willpower working in there not to eat them all. Might have been a push to eat all 10/30 thousand, though. Thanks for sharing the memory. I will also definitely be trying the golden syrup instead of the sugar.

I found this because I needed your recipe because my Mom made this Souffle with the same ingredients except she added some mild jalapeño peppers (not the extremely hot one's). It actually added flavor. She also used Shard Cheddar because both my younger brothers and my Mom (who made it) and my Dad prefer the Sharp Cheddar Cheese as opposed to the Mild or Medium Cheddar. The Sharp Cheddar and also the New White Sharp Cheddar Cheese is excellent. My Dad turned me onto the (New to me) Extra Sharp Aged White Cheddar Cheese. He buys a block of it so he can make slices and/or Grate it for soups, salads potato toppers with the sour cream etc... it's good with the Egg Omelet my mom makes with the home fried potatoes and Sauteed onions and then my dad may add some tomatoes Sauce and seasoning for the Spanish Omelet that my Grandmother used to make. (My Dad's Mom is from Barcelona Spain). Thank you for sharing. I needed your recipe for a starting reference, since I haven't made this before and my Mom and my Dad are on a Royal Caribbean Cruise.

Hi Tony. No water needed. Just ensure you have plenty of Beans. The moisture from them along with the fat in the Corned beef is what helps it cook. Enjoy.

Strawberry would be better, or blackcurrant. Cherry has a skin on thats not great when blended, you would need to peel the cherry's.... You could use tinned raspberry if you can find them at your grocery store

Cracking stuff, looks great Chips is athenian af, I’d recommend loads of fresh mint too Quite often I’ll bake some marinated boneless thighs and let them cool for a while, then it’s easy to slice them super thin and blast them in a hot pan until they go crispy at the edges
