Creamed Spinach Ingredients 1 lb frozen spinach, cooked according to the package 3/4 cup heavy cream 1 teaspoon garlic powder 4 oz cream cheese, cut into cubes 1/2 cup parmesan cheese Directions Squeeze out all of the excess liquid from the spinach. Pour heavy cream into a pan, add garlic powder and bring to a boil. Stir in cream cheese. Lower heat to medium low and cook until the cream cheese has melted, about 3 minutes. Stir in spinach and Parmesan cheese and bring heat back up to medium. Season with salt and pepper and remove from heat once the spinach has warmed through.

Use pork belly and don’t trim all the fat but trim some. Then cook the pork belly and take some fat out and not all. It’s a healthier alternative to Vegetable oil is so unhealthy and “chemically” processed it’s so unhealthy.

Roasted Tri Tip Ingredients 2-3 lbs tri tip roast, trimmed 1/2 cup soy sauce 1/4 cup vinegar 1/4 olive oil 2 tablespoons brown sugar Garlic powder Salt & pepper Directions Combine soy sauce, vinegar, olive oil and brown sugar together in a bowl. Place tri tip roast into a resealable plastic bag and pour over marinade. Seal and marinade for 8 hours or overnight. Flip the bag a couple times in between so that it marinates evenly. Preheat oven to 400°. Remove the tri-tip from the marinade and reserve the marinade for later. Season both sides with salt, pepper and garlic powder. Place it onto a baking sheet and bake for 30-35 minutes, depending on the size. Cooking time will vary, about 10-15 minutes per pound. Medium rare/medium is about 135°-140° with a meat thermometer. Let tri tip rest for 10 minutes before slicing. Cut meat in half (this helps because grains go in opposite ways) and slice thin against the grain. Pour the reserved marinade into a pan and bring to a boil. Lower the heat to medium and cook for 4-5 minutes until sauce has reduced and thickened (if it becomes too thick add a little water to thin it out). Drizzle sauce over sliced tri tip.

No Bake Oreo Dessert Ingredients 2 x 3.9 oz packages chocolate pudding mix 3 1/4 cups milk 1 package regular or double stuffed Oreos, can use family size. 1/2 cup (1 stick) butter, melted 8 oz bar cream cheese, softened 1 3/4 cups powdered sugar 8 oz fresh whip cream or an 8 oz container cool whip Directions Combine instant chocolate pudding mix with milk and refrigerate to set. If using fresh whip cream, beat 1 cup of heavy whipping cream with an electric mixer. Start at low speed then increase speed to high and continue to beat until stiff peaks form. If using Cool Whip reduce powdered sugar to 1 1/2 cups. Place Oreos into a resealable plastic bag and crush. Reserve about 1/3 cup of cookie crumbs. Transfer the remainder to a mixing bowl and combine with melted butter. Spread onto a 9 x 13“ baking dish and press down to form a crust. Refrigerate while making the next layer. Combine cream cheese with powdered sugar. Gently fold in the whip cream or cool whip. To assemble, spoon cream cheese/whip cream mixture over the cookie crust and spread evenly. Spoon chocolate pudding evenly over and spread until smooth. Top with remaining cookie crumbs. Refrigerate for a few hours before serving. Note This dessert can be prepared the day before.

Thanks for showing us how to make this. It's gotten TOO EXPENSIVE to eat out. And, even if I wanted to, the TGIF's by us has closed a few months ago. We went one day (say Nov-2023), and their prices were so high you just wouldn't believe it. Like I got a sizzling chicken meal (which I grew up loving) with two sides (loaded mashed potatoes and side of brocolli). The chicken breast was pretty small: no nice toppings like I remember, no cheese even, just mildly seasoned and burnt chicken (honest). Side of brocolli was like (maybe) 6 pieces and very uncooked, chompy. Then, loaded potatoes were good -- nothing to say there. Then, I think the bill was $18.99 (before tax). I couldn't believe it. Thank God it was to go, because if I had been there, I'd given them a piece of my mind. Thus, we never went back. But, years ago, we used to go once every two weeks or so and easily spend $30+ (probably $40) for two big meals, two drinks, and a split desert. Not surprising that our location closed in north of Houston, Texas. And, not surprising that TGIF's company filed bankruptcy in late 2024. Not a shocker. They deserve it.

I always buy a roast instead of stewing beef. Stewing beef is usually too lean and about a third more expensive. I need that marbling [ I always ask the butcher to not eliminate much fat]. Plus the browning of the fat adds incredible flavor, I'll sear the fatty parts first before the meat which is a bit more work at the beginning. Thankfully, my wife also likes fat as much as I do.

Shrimp & Sausage Jambalaya Pasta Ingredients 1 lb shrimp, peeled and deveined 12 oz Evergood hot links, sliced 2 bell peppers, sliced 1 onion, diced 5 garlic cloves, minced 28 oz can crushed tomatoes 1 cup chicken broth 1 tablespoon + 1 teaspoon Cajun seasoning 3/4 cup heavy cream 1 lb linguini, cooked according to package instructions Directions Season shrimp with salt and pepper. Heat oil in a pan over medium high heat and add shrimp. Cook until cooked through, remove and set aside. Add more oil to the pan and brown sausages for 2 minutes. Add onions, bell peppers and garlic and cook for 3 minutes. Stir in crushed tomatoes, chicken broth and Cajun seasoning and bring to a boil. Let cook for 1 minute over medium heat. Stir in heavy cream. Stir in cooked linguine noodles and season with more Cajun Seasoning or salt if desired. Stir in shrimp and remove from heat.

White Chicken Chili Ingredients 1 1/2 lbs chicken thighs, trimmed and cut into bite sized pieces 1 onion, diced 3 garlic cloves, minced 1 teaspoon chili powder 2 teaspoons cumin 2 - 15 oz cans white beans, drained 2 cups frozen corn 7 oz can fire roasted green chilis 3 1/2 cups chicken broth 4 oz (half bar) cream cheese, cut into cubes Optional toppings - tortilla chips, chopped cilantro, sliced jalapeños, sour cream Directions Heat oil in a pan over medium high heat and sauté onions and garlic for 2 minutes. Add chicken, season with salt and pepper and cook for 2 minutes. Stir in chili powder and cumin. Add beans, corn, green chilis and chicken broth. Season with salt and pepper and bring to a boil. Lower heat to medium low and let simmer uncovered for 10 minutes. Stir in cream cheese and let simmer for another 10-15 minutes, stirring occasionally until cheese has melted (I like to smash the cheese against the pot with a spatula). Serve with cilantro, jalapeños, chips, sour cream, or any other desired toppings.
