@@lucyosipchuk3400 Chicken & Mushroom Orzo in Bone Broth Ingredients: 1 cup orzo pasta 3 cups chicken bone broth (or low-sodium chicken broth) 2 tablespoons olive oil (divided) 1 lb boneless, skinless chicken breasts or thighs, diced 1 medium onion, finely chopped 2 teaspoons onion powder 2 cups mushrooms, sliced (cremini or button mushrooms work well) Salt and pepper to taste Fresh herbs (optional: thyme or parsley) Grated Parmesan cheese (optional, for serving) Instructions: Cook the Orzo: In a large pot, bring the chicken bone broth to a boil. Stir in the orzo, reduce the heat to medium-low, and cook the pasta according to the package instructions, until the liquid is absorbed and the orzo is tender. Keep the pot covered to trap the steam, which helps the orzo cook evenly. Set aside. Cook the Chicken: While the orzo is cooking, heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the diced chicken and season with salt, pepper, and 1 teaspoon of onion powder. Cook the chicken until golden and cooked through (about 6-7 minutes). Remove the chicken from the skillet and set aside. Sauté the Mushrooms: In the same skillet, add the remaining tablespoon of olive oil. Add the sliced mushrooms and sauté for about 5 minutes, until they release their moisture and begin to brown. Season with a pinch of salt, pepper, and the remaining teaspoon of onion powder. Stir occasionally to prevent burning. Combine: Once the mushrooms are cooked, return the chicken to the skillet and toss to combine. Simmer: Cover the pot and allow it to simmer on low for 5-10 minutes, or until the liquid is absorbed, and the flavors have melded together. Adjust seasoning to taste with more salt, pepper, or a squeeze of lemon for brightness.
