Tbh, I use the flare up to develop a good crust. Leave it over the direct flame for like 10 seconds each side so it doesn’t burn.

@Pokechop01 but you need to put some olive oil on it to make the seasoning stick. so the steak will always be wet unless you threw it on the grill as is and don't care about seasoning. If it was previously frozen and you're thawing it trying to get rid of excess moisture well you already loss.
